If you’re missing the delicious food that comes out of our St John’s D.S.G. kitchen (no offence, Mom!), then you’re in luck: our wonderful Catering Team will be sharing some of their most-loved recipes with you all! Today’s recipe is a hearty, homemade treat, perfect for a light lunch on a rainy Autumn day. It is, of course: Mr Maduna’s Roasted Red Pepper and Tomato Soup!
- 5 garlic smashed cloves
- 3 red onions
- 1kg tomato
- 1l water
- 4 Red Peppers deseeded
- 1 Vegetable stock cube
- 1 packet freshly torn basil
- Fresh cream for garnish
Quarter your tomatoes, onions, and red peppers. Place quartered veg and garlic onto a baking tray. Season with your favourite veg spice and salt and pepper to taste. Drizzle with olive oil and roast at 180 degrees until the onions and red peppers are slightly charred.
Place the roasted onions, tomato, garlic and onion in a pot on the stove top over a medium heat, add ½ the basil, veg stock and water. Bring to a boil and allow to simmer gently to let the flavours build (about 30 minutes.)
Use a stick blender/ liquidizer to blend to your desired consistency.
Serve with a dollop of fresh cream and some torn basil for garnish.
To add a bit of comfort food, serve with a toasted mozzarella cheese sandwich.
